I guess I really need to work on my recipe titles.
This is an easy dinner I often make when we have sausages. I would also make it meatless as it certainly is hearty enough without!
Roasted Cabbage and Friends
Package of sausage (I’m using 5 Andouille sausages from President’s Choice)
1/2 head of cabbage (I’m using green), cored, quartered and cut into 1/4 inch slices
4 potatoes, peeled if they aren’t new, and chopped into roughly 1″ cubes
1 – 2 cups chick peas (1 can rinsed or previously cooked)
Garlic oil (from previous post, or just plain oil)
Seasoning salt (recipe below)
Toss the vegetables together with the oil and seasoning salt to taste in a large bowl.
Spread the vegetables out in a large greased pan so they are not too crowded.
Pierce the sausage and then place on top of vegetables
Bake at 425’F for 40 minutes, turning sausages periodically so they brown.
Seasoning Salt: I like to make mine with equal parts dried thyme, oregano, onion powder, pepper, salt and paprika.
Result: This was a very tasty and very filling meal, even if it wasn’t that colourful. The roasted chickpeas were especially nice!
