Since aquiring (thanks next door neighbours who left their place in a stinky shambles, but also left a lot of free stuff for the rest of the building) a round 6 quart cooker I’m able to try out some cake/dessert recipes that I’ve wanted to try – the only pan I have that will fit in my oval cooker is a tiny loaf pan – this round one fits 4-5 cup bowls/circular casseroles.
So I’m trying out an apple cake!
Slow Cooker Apple Cake
1 cup flour
3/4 cups brown sugar
2 tsp baking powder
1 tsp cinnamon
1/4 tsp salt
3 apples, peeled, cored, and chopped fine
2 tsp vanilla
6 Tbsp. water+2 Tbsps. ground flax(refrigerated for 1 hour)-or 2 eggs
Mix together dry ingredients then add in apple pieces and stir to coat.
Beat eggs (or flax egg substitue) and vanilla together.
Fold egg mixture into dry ingredients. I had to add about a 1/4 cup of water to incorporate all the dry ingredients.
Scrape batter into a well greased 4 cup casserole dish or bowl.
Cook on high for 2 to 2 1/2 hours.
This was super-easy and quick (except the worry-free cooking time) and worked perfectly – I will definitely be baking more often with this new round slow cooker. The cake is small but a perfect size for 2 people who don’t eat sweets a lot. One family would probably finish it for a desert.
