Ethiopian Cabbage and Potatoes

I’m not sure how authentic this is, I found it on the internet and the writer said her Ethiopian friend brought it to a potluck, so its possible.  It sounded tasty at any rate.  It is going with some meatloaf I had in the freezer.

Ethiopian Cabbage and Potatoes
1/2 purple cabage, cored and sliced
4 potatoes, diced small
3 onions, sliced
5 cloves garlic, minced
1 tablespoon cumin seed
1 tsp salt
1 tsp black pepper
1/2 tsp. turmeric
1/2 tsp. corrianderBread 001

Heat some oil in a skillet over medium heat and add onions and garlic, cook until browned and softened.  Add potatoes to skillet and fry until browned.Bread 002

Add spices and stir.Bread 003 then add cabbage.  Cover and cook until potatoes are done, about 30 minutes.Bread 004

This was really tasty and a great way to use up that last half of cabbage.  Plenty of leftovers!
